My mornings can sometimes be pretty hectic. Unfortunately on these types of mornings, I often opt for breakfast through the drive thru (Dunkin Donuts is my fave) or sometimes even skip breakfast all together. One way that I try to counter this cycle is with some of my easy healthy recipes that are both delicious and good for you. Today I want to share a new healthy breakfast recipe that doesn’t take long to make, is easy to throw together and (better yet) you can grab on your way out the door – my easy healthy banana almond muffins.
I love breakfast foods. I will eat them at any point in the day for sure. And muffins are among my favorites because they are so portable for those busy mornings or if you just want a snack in the afternoon. I especially love it when muffins are good for you.
This particular recipe is so easy to make – it is only 6 ingredients are are done in 20 minutes from start to finish. I added some vanilla protein powder (my shakeology) both for flavor and to give these muffins a bit of a nutritional boost. You can also add additional fruits (such as apples) and nuts (walnuts) if you like.
To make these yummy muffins, all you do is preheat the oven to 350 degrees. Then you mix together 2 eggs, 2 medium bananas and 1 tablespoon of butter. Next, you combine almond flour, baking soda and protein powder in a separate bowl. Combine the two mixtures together, spoon into a muffin tin and bake for 15 minutes. When done, you have a healthy breakfast or snack that the whole family will love.
Easy Healthy Banana Almond Muffins
- 2 large eggs
- 1 tbsp. butter
- 2 medium bananas, mashed
- 1 1/2 cup almond flour
- 1 scoop vanilla protein powder
- 2/3 tsp. baking soda
Preheat oven to 350 degrees.
In large mixing bowl, combine eggs, bananas and butter and set aside.
In medium bowl, combine flour, protein powder and baking soda.
Add flour mixture to egg mixture and mix until blended.
Spoon batter into muffin tins and bake for 16 minutes.
Serve and enjoy!
