While now it is Summer, it is still a little cool. Which means it’s a time for some of my favorite fall foods. Fall and winter is a time for some of the best food and I love nothing more than curling up in front of the fire with a bowl of soup, stew or chili. Some of my favorite easy healthy recipes are chilis, especially in the fall and winter. They are easy to prepare and very filling. Not to mention they keep you warm on these cooler nights. So today I am sharing a delicious, healthy chili recipe to try out these cool days – Crockpot Veggie Quinoa Chili.
It is important to me that I am able to prepare healthy delicious meals for my hubby and myself. Both of us try to lead active lives and we need the nutrients to keep us going during our long runs. We also know staying healthy is very important.
One of the best things about this recipe is the use of the crockpot. Like most people nowadays, I lead a hectic life. It is often hard to work a full-time job then come home and prepare a healthy and delicious dinner. During the middle of the week, I am often quite exhausted by the time I arrive home so I make use of my crockpot regularly. I love being able to come home from work and have dinner ready to eat.
This particular recipe is great because you can throw all the ingredients into the crockpot in the morning and by dinnertime there is a hot, filling healthy pot of chili for you and your family to enjoy. The recipe also makes enough chili to save for later. I will typically freeze the leftovers in small bowls for lunches and dinners the rest of the week.
Crockpot Veggie Quinoa Chili
A healthy, vegetarian chili recipe that is easy and delicious.

- 3 cloves Garlic, Minced
- 1 cup Uncooked Quinoa, Rinsed
- 2 cans (14.5 Oz Cans) Diced Tomatoes With Green Chilies
- 1 can Tomato Sauce
- 2 Tablespoons Chili Powder
- 2 teaspoons Cumin
- 1-1/2 teaspoon Smoked Paprika
- 1-1/2 teaspoon Sugar
- 1/2 teaspoons Salt
- 1/4 teaspoons Freshly Ground Black Pepper
- 1 cup Corn
- 1 can (15 Oz. Can) Kidney Beans, Drained And Rinsed
- 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
- 1-1/2 cup Vegetable Broth
Combine all ingredients into crockpot.
Cook on low 8-10 hours or high 4-6 hours.
Place in bowls and enjoy!
