Today I will share one of my favorites – my healthy crockpot turkey veggie chili.
Because of a busy week, I opted to cook it in my trusty crockpot so I could throw all the ingredients in it and forget about it until time to eat. For the ingredients, I started off with ground turkey as my meat so that it would be both low in fat and calories. I added some corn, peppers and onions, tomatoes, beans, and my secret ingredient – pumpkin. That’s right. I added a can of pumpkin puree to the ingredients. It made the chili smell sooooo good and gave it a unique flavor and texture that those at the party loved.
After the meat a veggies came all the extra spices and such that gives the chili its flavor. I added some paprika to give it a smoky flavor as well as the traditional chili powder and cumin for some spice. Now I like my chili a little on the hot side so I also added a bit of hot sauce to kick it up a bit. To top it off, there is a dab of pumpkin pie spice, lime juice and Kentucky bourbon. If you are not a drinker or cook with alcohol you can leave this last ingredient off. I just like it because it added to the smoky sweet and spicy flavor.
That’s it. After all the ingredients were added, I simply cooked it for about 6 hours on high. I topped it with some shredded cheese and plain greek yogurt (instead of sour cream).
Easy Crockpot Turkey Veggie Chili
- 1 lb. ground turkey
- 28 oz. diced tomatoes
- 15 oz. crushed tomatoes
- 15 oz. black beans
- 1 green pepper, sliced
- 1 onion, sliced
- 15 oz. kidney beans
- 15 oz. chili beans
- 1 red pepper, sliced
- 12 oz. frozen corn
- 15 oz. pumpkin puree
- 4 tbsp. chili powder
- 2 tbsp. cumin
- 1/4 cup hot sauce
- 1 tbsp. pumpkin pie spice
- 2 tbsp. lime juice
- 2 tbsp. minced garlic
- 1/2 cup bourbon (optional)
- shredded cheese and greek yogurt for topping (optional)
- Place all ingredients into crockpot.
- Cook on high for 4-6 hours or low for 8-10.
- Serve into bowl, top with cheese and greek yogurt.
