You know that I like nothing better than to prepare meals that are easy to make. I just don’t have the time most weeks to get fancy. And in our house, we love Mexican food. So today I am another easy healthy recipe – my healthy quinoa enchilada bake.
I love this recipe because it is full of healthy goodness and is super filling. I am a big fan of quinoa because it is a great source of protein and other healthy goodness. It is a great substitute if you want to go meatless for a meal or two. You can also add whatever veggies (or meat) you have to make this recipe your own.
This recipe is so easy to make and is perfect for those weeknights when you just don’t have a whole lot of time to prepare a nutritious meal. The first thing you will want to do is cook your quinoa. While it is cooking, you can mix all the remaining ingredients except the cheese in a large mixing bowl. Add the quinoa and it is ready to go.
Next, pour your enchilada mixture into a casserole dish and top with cheese. Then put in the oven for 15 minutes.
When done, you have a fabulous, healthy meal that will be a hit for the whole family.
Easy Healthy Quinoa Enchilada Bake
It’s a delicious healthy (and easy!) vegetarian quinoa enchilada bake that’s perfect for those busy weeknights.
- 1 can enchilada sauce
- 1 can black beans
- 1 can corn
- pico de gallo
- red peppers
- green peppers
- 1 cup cooked quinoa
- 1 avocado
- 2 cups mexican blend shredded cheese
Preheat the oven to 375 degrees.
Cook the quinoa as the directions on the box.
While quinoa is cooking, mix all the ingredients except the sauce and cheese in a large mixing bowl.
Once quinoa is done, add to mixture.
Add enchilada sauce and stir until combined.
Pour mixture into a large casserole dish and tops with the cheese.
Bake for 15 minutes.
